We modified the recipe as follows:

2 lbs smoke sausage
2 lbs chicken thighs
2 qts chicken stock

Aromatics:
1 chopped bell pepper
1 chopped lrg onion
1 chopped celery stalk
4 chopped garlic cloves

Roux mixture
1/4 cup vegetable oil
1/2 cup flour
1 tsp Cajun seasoning
