Greetings! Today I am sharing a super quick and delicious pressure cooker recipe for chicken salsa verde. While this may not be totally traditional, it is easy and it is on the table in a short amount of time.

My girls started school today so we are back into the regular school schedule. This year though they are both going to the same school and my oldest is driving them. This saves me a ton of time where I won’t have to be doing the morning and afternoon school roundup for the first time in my life as a mother! As I sit typing this it does feel very weird!

This is the perfect dinner to get on the table fast. While your chicken is under pressure, cook up some rice and slice some tomatoes and even some avocado for great sides to go along with this meal. There will be great leftovers if you used a family size bag of chicken like I did. You can easily shred this chicken and use it for tacos on another night. Leftover rice on the side and whip up some refried beans and you are good to go!

I also used the mild version of the “Table Shake” that was sent to me by the good folks at J.D.’s salsa and I have to tell you that I really love this stuff! It perfectly seasons your chicken for this dish and I also use it for roasted chicken, chicken tacos, chicken enchiladas and taco meat. It’s just perfect. I use a 10 quart Elite pressure cooker that I purchased from HSN. They currently don’t offer this model but do offer an 8 quart version that is a bit different from the one I use here. If you have an electric pressure cooker, get it down off the shelf where you put it because you were either too afraid to use it or could not figure out what to do with it once you got it and make something amazing for dinner.

I cannot tell you how much time this saves me in preparing meals for my family. I can take a frozen piece of meat or a whole frozen chicken or a roast or a pork tenderloin and have a wonderful dinner on the table in an hour. The meat always turns out succulent and tender and infused with the flavors that I put in the pot with it.

Don’t worry if you don’t have an electric pressure cooker! You can easily make this meal in your crock pot, but it will take all day. Just throw the ingredients in the pot and set it on low for about six to eight hours and cook up some rice and a veggie of your choice and dinner is ready in no time after you get home in the evening!
